  Nicobella sent over a bag of the most wonderful snack food I have had in awhile. I love Mama Munch. WonderMill Grain Mill

I was really blessed to be able to try out the WonderMill Electric Grain Mill. This is an absolutely amazing piece of machinery. I love that the WonderMill Electric Grain Mill allows you to create so many varieties of flour at home. Hubby and I tried out the mill and were very pleased with the results. We made rice flour first. I can't explain to y'all how user friendly and simple the WonderMill Electric Grain Mill is to use. Plug it in, turn it on, pour your grain, rice or whatever you are milling in the grinding side, wait til it is finished milling, (You can tell it's done from the change in sound) turn off the machine and presto you have the freshly ground flour of your choosing. How easy is that. The container that the flour falls into while grinding can also be used as a canister for flour storage. Even comes with an airtight lid.

 I looked online for recipes for rice flour and found many of them to be for batters such as tempura. This is great , but you know I like getting creative. We decided on  Rice Flour Pancakes. I tried a recipe that I found on the web and did not like the results. The flour we made came out like baby powder. We had milled the rice on the pastry flour setting and it came out beautifully smooth I could not see why the pancakes were so dense in texture.

 Hubby decided we just needed a new recipe. So we played around a bit and since making more rice flour was so simple we experimented til we came out with a recipe I am proud to share with y'all.
I present to you...

Vanilla Rice Flour Pancakes

Ingredients
1 egg beaten
1 TBS canola Oil
1 tsp vanilla
1/2 cup vanilla almond milk


Blend first four ingredients together

1 cup rice flour made in your WonderMill
1/2 tsp salt
1/4 tsp baking powder

Whisk together next 3 ingredients
Blend wet and dry ingredients together. Make sure to get rid of any lumps. Batter is a bit thicker that normal pancake batter.
Heat griddle over medium high heat. Add bit of butter. let it melt. Drop batter by spoonful onto melted butter. Cook until edges are done. Flip and coo other side. Serve warm with your favorite syrup.

 Hubby and I will be experimenting with the WonderMill Grain Mill and will be posting more recipes soon. I am heading to our local health food store this week to find more grains to mill. The WonderMill Grain Mill is a fun way to get healthy and enjoy time together as a family creating and enjoying your culinary creations.

  I was really happy to get the chance to review the Royal Berkey Water Filter from Big Berkey. The Royal Berkey is a super stylish water filter that will look fabulous in any decor.
 We live in the country and have well water. We have it tested occasionally just to make sure it is good. Every time it is tested the water folks tell us it is of excellent quality and could be bottled and sold. LightSpeed Tents sent over one of their Quick Cabanas for us to review. This is a really cool half style tent that is perfect for the beach or any other place you need pretty close to instant shade. I say almost instant cuz this baby is so easy to put up it's amazing. I tried in the front yard on a fairly windy day, You know to test it for putting it up in on the beach conditions. I always see these people trying to put their shade area up on the beach having such trouble in the wind. No problem at all with the LightSpeed Tent Quick Cabana. I had our set up in 45 seconds with no help at all. This was first time set up to y'all. Directions are clear and set up is a breeze. No pun intended.

The Original™ Chai Tea Latte Concentrate

 
We at Texas Kitchen got to try out The Original™ Chai Tea Latte Concentrate from Oregon Chai. Y'all I cannot express how amazing this stuff smells. The aromas wafting through the house are wonderful. Super easy to make. You simply mix the concentrate 1/2 and 1/2 with your favorite milk. I used Vanilla Almond Milk.
 You can serve warm or over ice. We chose warm, thus the beautiful scents in the air. The flavor is excellent. Smooth. A little sweet. The tea and spices blend well with almond milk. I really like this beverage. It is a nice relaxing drink. Would be perfect for special occasions or anytime you want to treat yourself.

An Original Chai Tea Latte has approximately 30-35 mg of caffeine per serving (same as a lightly brewed cup of black tea).

"Cooper and Me"

I was sent a new book by an 11 year old girl and her mom. They describe a child's view of the first day of school. "Cooper and Me" shows the way kids might feel going to school for the first time. They may be a bit apprehensive. "Cooper and Me" shows a way to get past these little issues.

 Alexa Peters, the 11 year old illustrator, does an excellent job. The pictures are full of life.  The writing is what you would expect from a child. No Shakespearean English here.

 There is a place included  in the back of the book to record your own child's memories from their first day of school.

About Cooper and Me:

Cooper and Me was illustrated by 11-year-old Alexa Peters and co-written with her mother, Monique Peters.  The idea was inspired by Alexa's own experiences on her first day of school.  A talented young artist and writer, Alexa wanted to give back to others in a meaningful way through her art.  Starting at a very young age, Alexa created illustrated stories about her daily experiences, and from the pages of her sketchbooks came the idea for her first book, Cooper and Me. 

Through rhythmic verses, Cooper and Me tells the story of a young girl who is nervous as her first day of school approaches.  She is frightened about leaving home and doesn't want to go without her best friend, her dog Cooper. Fortunately her mother finds the perfect solution to help the little girl overcome her fears – a small replica of her beloved pet she can take to school with her.  In Cooper and Me, the story of a child’s fears about starting school has evolved into a timeless tale about overcoming separation anxiety and trying new things – basic emotions all people experience throughout their lives – but this time, written by a child, for children.

The story behind Cooper and Me also offers an inspiring example of families working together to help others.  In addition to helping young children gain emotional resilience and confidence through their books, Alexa and mom Monique wanted to go beyond that to help less fortunate kids.  Their search for an organization to which they could donate a portion of the proceeds from the Cooper and Me book led to a charitable alliance with the Happy Hearts Fund, founded and run by Petra Nemcova, the supermodel who was directly affected by the tsunami in Thailand. Happy Hearts improves children’s lives through education and sustainable programs in natural disaster areas.
