  Fagor America sent over one of their awesome home canning setups for us to test out. The Duo 9 Piece Pressure Canning Set comes fully equipped with almost everything you need for pressure canning.You just supply the food and jars to put it in.

 Pressure canning is the only safe method of preserving low acid foods. These include anything with a ph lower than 4.6  Proper canning methods ensure not only the quality, but the safety of your canned goods as well. Foods lower than 4.6 on the ph scale include items such as seafood beef and poultry as well as many green vegetables.

Duo Pressure Cooker

 The Duo Pressure Cooker itself is made of 18/10 stainless steel with an aluminum sandwich bottom for even heat distribution. This is really important when canning. There is a triple safty mechanism to prevent problems associated with excess pressure build up.

 I love the second handle opposite the ergonomic closing handles for ease in moving the cooker when it is full. Sometimes they can get heavy. Always read and follow the manufacturer's instruction manual carefully before using any pressurized cooking device to avoid injury.

I love that Fagor America has included recipes for canning . What is even cooler is these recipes are available in Spanish in the second half of the book.
